Candida Friendly Sugar-Free Double Chocolate Flax Muffins

Ingredients:
1 cup ground flax seed
1 cup Nutracleanse fibre
1 tbsp baking powder
¼ tsp sea salt
1 ½ tbsp cinnamon
6 eggs (room temperature)
½ cup coconut oil (melted)
½ cup water (warm)
½ cup cacao powder
â…“ cup monk fruit sweetener
1 tsp vanilla bean powder
â…“ cup dark chocolate chips (sugar-free)
Instructions
Preheat your oven to 350ºF (177ºC) and line a muffin tin with paper liners.
In a medium bowl, mix together ground flax seed, Nutracleanse fiber, baking powder, cacao powder, monk fruit sweetener, salt, vanilla, and cinnamon. Use a whisk to stir until well combined.
In another bowl, beat eggs with a whisk for 30 to 60 seconds. Add coconut oil and water, mixing until combined.
Add wet ingredients to dry and stir until combined. Then add the chocolate chips, lightly stir again. Let the batter sit for 1 to 2 minutes to thicken slightly.
Divide the batter between muffin cups and bake for 20 minutes, or until a toothpick inserted into the centre comes out clean.
Let cool and enjoy! Store in the fridge up to 5 days or in the freezer for longer.
Notes:

If you don't have the Nutracleanse fibre, you can replace it with 1 cup ground flax seed
Not sure which sugar-free chocolate chips to buy? My favourites are the Crave Stevia brand Stevia Sweetened Chocolate Chips or the Camino brand Unsweetened Chocolate Chips
If you can't find those chocolate chips, another option would be cacao nibs or 100% dark chocolate bar (here is my favourite from Giddy Yo)
